Garden fresh tomatoes, citrus and herbs are some of my favorite things about summer. Colorful cherry tomatoes and aromatic herbs are perfect for creating fresh salsas. Enjoy this Tuscan inspired fresh salsa with your favorite chips or served over grilled fish. We love this on Mahi Mahi Tacos.
Fresh salsas also add an abundance of flavor to homemade dressings like our Lemon Tomato Basil vinaigrette.
Tomato Lemon Basil Salsa

1 pint Cherry Tomatoes
1 small Onion, peeled
1/2 cup Fresh Basil leaves and stems
4 Fresh Garlic Cloves
Juice squeezed from 1/2 a Lemon
1/2 teaspoon Salt
Directions
- Remove stems from tomatoes and rinse
- Chop onion into smaller chunks
- Peel garlic cloves
- Place all ingredients in food processor
- Pulse to desired consistency
Notes
- Any fresh from the garden tomatoes will work for this recipe. The cherry tomatoes are very juicy and foam when processed, which will dissipate after a bit. If you prefer a chunky salsa, hand chop ingredients instead of using the food processor. Enjoy with your favorite chips or serve over grilled fish or chicken. We love this on Mahi Mahi Tacos.
